Fruity Coleslaw ~ a healthy recipe from Our Fairfield Home & Garden

Do you love coleslaw but not all the calories that come with it? Here’s a little recipe I made up as a healthy alternative, FRUITY COLESLAW!

Every time I serve this coleslaw to guests or my family, it disappears. This is one of my most requested recipes, so I’ll let you in on it now, too. Quick and easy to make!

 

 

Fruity Coleslaw

Ingredients:

1 bag of shredded cabbage & carrots (1 lb)

1/4 cup each of rice vinegar and mayonnaise (more of each if you like a wetter slaw)

organic blue agave sweetener

1 large diced apple

a handful of golden raisins

Directions:

Mix the mayonnaise & rice vinegar together with a whisk in a large bowl

Add liquid agave to taste & whisk again

Toss the cabbage & carrot mix in this dressing

Add the diced apple & golden raisins and toss some more

*I let mine sit in the fridge for an hour or so. That way the raisins plump up a little. Toss again before serving and add salt & pepper if desired.

Makes enough for 6 to 8 servings.
